Easy Breakfast Recipe: Spinach Omelet with Gouda Cheese


If you are like me, you are always on the lookout for a healthy quick and easy breakfast dish to start off the day right.  I find that i need protein in the morning to help me stay full and not be so cranky.  My current workout is Body Beast, and this is a great breakfast for me right after an intense lifting workout.

 The Spinach Omelet with Gouda is the perfect combination of protein, veggies, and all around goodness.  Without further ado, let's get to it.

1.  Put 1 TBSP of Olive Oil in the Skillet, once it has warmed up.



2.  Next add in the Spinach and cook for 2-3 minutes, or until wilted.  Then add in the corn and cook for another 2 minutes.  Once the veggies are cooked remove them from the pan.


3.  Take your 3 egg whites and mix them together in a bowl, adding salt and pepper if desired.  You may even want to try adding Cayene pepper for an extra kick!

4.  Once mixed put the egg whites into the skillet and once the eggs start to set, gently lift up the sides to let the uncooked egg fold underneath.




4.  Once the egg whites are mostly cooked, add the spinach/corn mixture back in, and top with Gouda Cheese.


5.  Fold the mixture in half, remove from heat, and ENJOY!

Total Time: 20 min.
Prep Time: 10 min.
Cooking Time: 10 min.
Yield: 1 serving

Ingredients:
3 large egg whites
Sea salt and ground black pepper (to taste; optional)
1 tsp. olive oil
2 cups fresh spinach
½ cup sweet white corn kernels
½ oz. shredded smoked gouda cheese (2 Tbsp.)
